This is my favorite recipe for caramel corn. It is so soft and yummy but not so sticky that you worry you are going to yank out a tooth. I am sure it is low in calories as well. Make it and enjoy!
We pop our popcorn in a jiffy popper and I usually just make one layer on the bottom of kernels. I can not really guess how many cups that makes. You know the old super huge silver “popcorn bowls”? Well I make enough that it is about 2/3 of the way full. This recipe makes enough to perfectly coat the whole batch.
1 stick of butter
2 Cups Brown Sugar
1 Cup of Light Corn Syrup
1 Can of Sweetened Condensed Milk
½ Teaspoon of vanilla (or so)
Combine butter-sugar-and corn syrup and bring to a boil over med heat. Once boiling add the sweetened condensed milk and STIR almost constantly for about 10 min. It needs to be to soft ball stage (drop a small amount into a cup of cold water and it should form a ball). Once it reaches soft ball stage remove from heat and add vanilla. Stir and then evenly pour over the popcorn. Spray a spoon with non stick spray and mix the popcorn and caramel. In fact I spray the bowl as well before I add the popcorn. Let cool for a few minutes before shaping into balls. If you decide to do popcorn balls make sure your hands or gloves are well coated with butter or non stick spray. Lay the balls on wax paper until cool. You can also just stick it in a couple gallon sized baggies and munch it whenever the need possesses you! Y_U_M
